Banana Bread or Cake
Family favorite desert
My wife got this recipe from a friend form Brazil. I do the cooking here so I altered the recipe and have made it at least twenty times by popular demand. Fast and easy to make and disappears quickly once complete. My youngest son chimes “oh banana cake the smell that never gets old” every time it’s made.
Prep time 5 min. (with practice)
Baking time 30 to 35 min. (I use a glass baking dish so the time is 50 to 55 min.)
Ingredients:
3 cups all purpose flour
2 cups white sugar
3 tablespoons butter (or margarine)
3 eggs
1 tablespoon of yeast
1-cup warm milk
6 bananas
Topping
2 tablespoons white sugar
1-teaspoon cinnamon
Directions: Preheat oven to 350F.
In a large mixing bowl blend butter and sugar (I use a microwave bowl to melt the butter) then add the milk and warm as necessary in the microwave until warm, add yeast and the egg yolks and mix well. Once blended add the flour and mix well. Reserve the egg whites in another bowl and beat until volume is doubled and fold into batter. Pour into a buttered 9 X 12 pan. Slice the bananas evenly over the batter (I cut them crosswise in half inch slices) Mix topping in a cup and evenly sprinkle over the cake. Bake as stated and test doneness with a toothpick avoiding the bananas.
Note: Remove from oven and allow to cool on a wire rack. The lightly browned crust will contract from the sides and the topped bananas will be at the very top of the cake. Record time and adjust if necessary for next batch if appears too dry or too moist. I’ve also added walnuts or almonds in the batter but my family prefers it without nuts.
I live in Puerto Rico and grow my own bananas that are smaller (maybe 6 inches) than in the states so I use 8 bananas. You can't mess this one up so go try Ol Sarge's pride.
